This cold, creamy, crunchy, salty, and chocolatey trail mix frozen yogurt bark is the perfect healthy, whole food snack!
If you regularly read my blog (or for that matter, if you know me IRL), then you know that I love to run. I’ve completed one marathon (NYC 2005) and dozens of half-marathons. These days I run about five miles five days a week, sometimes a few more, sometimes a few less.
I am, and always have been, a morning runner. I used to get up and go first thing, to the amazement and amusement of Alex, who could never understand how a person could go from asleep to exercising vigorously in 10 minutes flat. But now that we have Owen, my routine has changed a bit. He is almost always up before me, so instead of pulling my hair into a ponytail and tying on my sneakers, I am pouring sippy cups of juice and trying to explain why it’s inappropriate to have Oreos at 6:45AM. I typically head out for my run much later in the morning, either after I’ve dropped Owen at daycare, or after Alex is up and sufficiently caffeinated.
Despite all this, I never eat breakfast first, because I hate the feeling of running on a full stomach. But I do like to have something–a little nibble, a bite or two, to ward off hunger and give me a tiny boost of energy. My go-to morning snacks include a small handful of dry Raisin Bran or 1/4 slice of bread with a little peanut butter on it.
And now this: trail mix frozen yogurt bark.
Creamy Greek yogurt, a drizzle of honey, and a touch of vanilla all spread out on a baking sheet and topped with classic trail mix ingredients like granola, peanuts, dried fruit (I used cranberries) and–of course–a little bit of chocolate. Because Oreos may not be OK first thing in the morning, but mini M&Ms are totally acceptable 🙂
This recipe seriously could not be any easier. I didn’t even dirty a single bowl making it. (I used Fage 2% plain Greek yogurt, which you can find in 2-cup containers, so I just mixed the honey and vanilla right in and then spread it on my baking sheet.) Add the toppings and then pop it in the freezer for an hour or two until it’s set. Then break it into shards and enjoy!
You can store the bark in an airtight container in the freezer for about a week, if it lasts that long. But I doubt it will! In the summer, what could be better than cool, creamy frozen yogurt sprinkled with all salty, crunchy, sweet toppings? It’s the perfect pre-workout, post-workout, or let’s be honest–no workout–snack.
- 2 cups plain Greek yogurt (2% or full-fat)
- 2 tablespoons honey
- Seeds from one vanilla bean, or 1 teaspoon pure vanilla extract
- 1/2 cup granola
- 1/4 cup chopped roasted, salted peanuts
- 1/4 cup chopped dried cranberries
- 2 tablespoons mini M&Ms
- 1/4-1/2 teaspoon flaky sea salt (optional)
- Line a rimmed baking sheet with parchment paper. In a bowl (or in the yogurt container itself) mix the yogurt, honey, and vanilla. Pour on to the prepared baking sheet and spread in an even layer about 1/4-inch thick. Sprinkle with the granola, peanuts, cranberries, M&Ms, and sea salt, if using. Transfer the baking sheet to the freezer and freeze until firm, about 2 hours. Break into shards. Frozen yogurt bark will keep for about a week, stored in an airtight container in the freezer.
