Green Goddess Egg Salad

Green goddess dressing is the perfect way to punch up ordinary egg salad. Anchovy paste is quite salty, so you may not need to add any extra salt to this dish.

Ingredients

  • 1/2 cup mayonnaise
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped chives
  • 2 teaspoons fresh squeezed lemon juice
  • 1/2 teaspoon anchovy paste
  • 1/4 teaspoon freshly ground black pepper
  • 8 hard boiled eggs chopped
  • 2 stalks celery halved lengthwise and thinly sliced
  • Pinch of kosher salt to taste

Instructions

  1. Combine the mayonnaise, parsley, dill, chives, lemon juice, anchovy paste, and pepper in a mini- or regular food processor and process until well blended.
  2. Combine the eggs and celery in a medium bowl. Add the dressing and Stir gently just until combined. Taste and season with salt, if needed.
