
This quick and easy dessert is all the best parts of apple pie! Warm, gooey, cinnamon-laced apples, plump raisins, and a hint of orange zest. Try it over Greek yogurt, oatmeal, or vanilla ice cream. I like to use 1 Granny Smith and 1 Gala apple, but any combination will work. This recipe is easily doubled.
Melt the butter in a large sauté pan over medium heat. Add the apples and cook, stirring frequently, until they are tender-crisp, 5 to 6 minutes. Stir in the maple syrup or sugar. Measure the cider in a measuring cup. Add the cornstarch and stir to dissolve. Add the cider mixture to the pan and cook for a minute or two, until the mixture thickens. Stir in the cinnamon, vanilla, zest, and raisins.
