This Indian-inspired chopped salad is a bright, refreshing accompaniment to any hearty, rich main dish. Substitute cilantro for the parsley, and serrano for the jalapeño if you prefer.

Ingredients
1cupfinely chopped red onion
1cupchopped radishes
2cupschopped English cucumber
2large ripe tomatoeschopped
1honeycrisp applecored and chopped
1tablespoonminced jalapeño
1/2cupchopped fresh flat-leaf parsley
1/4cupchopped fresh mint
5tablespoonsfreshly squeezed lime juice
1teaspoonground cumin
1/2teaspoonkosher salt
1/4teaspoonfreshly ground black pepper
Instructions
Rinse the onion in warm water and pat dry. Transfer it to a large bowl and add the radishes, cucumber, tomatoes, apple, jalapeño, parsley, and mint.
In a small bowl, whisk the lime juice, cumin, salt and pepper. Pour over the salad and toss to coat.
Recipe Notes
Rinsing the onion in warm water removes some of its bite.
