Chocolate Tofu Pudding

Top this chocolate tofu pudding with fresh raspberries or strawberries.

Ingredients

  • 2 tablespoons vegan chocolate chips
  • 1 package silken tofu 12-14 ounce
  • 1/3 cup cocoa powder
  • 1/3 cup agave
  • 1 tablespoon vanilla extract
  • 1 teaspoon instant coffee granules
  • 1/4 teaspoon kosher salt

Instructions

  1. Put the chocolate chips in a microwave-safe bowl and microwave for 30 seconds to 1 minute, stirring once, until the chocolate is melted and smooth.
  2. In a blender, combine the tofu, cocoa, agave, vanilla, instant coffee granules, and salt. Add the melted chocolate and blend until smooth.
  3. Transfer the pudding to a serving bowl, cover with plastic wrap, and chill until ready to serve. The pudding will thicken as it chills.
