kale lemonade

Green Juice Lemonade

This lemonade is what happens when your super healthy, holier-than-thou green juice meets everyone's favorite lazy summertime drink.

Ingredients

  • 4 cups water
  • 1 cup granulated sugar
  • 1 cup freshly squeezed lemon juice
  • 3 cups loosely packed kale
  • 1/2 cup loosely packed mint
  • 1- inch knob ginger
  • 1/2 English cucumber
  • 1 green apple quartered

Instructions

  1. In a small saucepan, combine 2 cups of water and the sugar. Bring to a simmer and stir until the sugar has dissolved. Let cool. Transfer sugar syrup to a pitcher and stir in the remaining 2 cups of water and the lemon juice. Transfer to the refrigerator and chill.
  2. Working in this order, pass the kale, mint, ginger, cucumber, and apple through a juicer. Stir the juice into the lemonade and chill.

Recipe Notes

It's important to chill the lemonade before adding the green juice in order to preserve it's fresh taste and color. This lemonade is best consumed within a day or two.
