Happy Sunday and Happy Easter (if you celebrate it)! I hope you are having a super weekend. I was sick with a stomach bug all last week and couldn’t even look at food. Which, as a food blogger, posed a bit of a problem. I’m feeling much better now, and since I basically fasted for five days, I’m starving. That’s why this week’s meal plan is all about bold flavors, including paella with sausage and chicken, a colossal muffatetta sandwich, tangy Hawaiian coleslaw, and easy parmesan-crusted tilapia. Plus, my fave vegan salad from my own archives, a refreshing pineapple coconut water, and a chocolate raspberry smoothie bowl.
