Happy Sunday everyone! I hope you’re having a great weekend. They’re predicting another snow storm for us here in New York, but I flat out refuse to believe it. But just in case… this week’s meal plan is all about healthy comfort food: raw pad thai, fresh pasta with roasted veggies, Indian-spiced sweet potato soup, and lasagna roll-ups. Plus, a fruit- and veggie-packed smoothie for breakfast and a banana sprinkles skillet cookie for dessert.
