Can I ask you all a very important question? Do you feel like boxed salad greens go bad at an insanely fast rate? Sometimes it seems like I’m not even out of the grocery store parking lot before there is a rotten leaf of spinach in there, poisoning the whole plastic clamshell. It drives me crazy! 
 
I was rage-spiralling about this phenomenon last week (It’s a salad conspiracy!) because I went to make my favorite smoothie and my kale was all slimy and gross, and I had to toss the whole package. Not only was it a total waste, I was also at a loss as to what to have for breakfast. My smoothies always have some kind of produce in them, from beets, to spinach, to zucchini. 
 
But I was starving and I had to come up with something. On a whim, I decided to throw some raisins in the blender. Why not? Lots of people put dates in their smoothies. And from there it was really only natural to start thinking about oatmeal raisin cookies… so I added some oats, cinnamon, vanilla, and shredded coconut.
 
This vegan gluten-free oatmeal raisin smoothie is one of my new favorites. I love that I always have the ingredients on hand (and that none of them go bad if you turn your back for two seconds). It’s wholesome and filling, yet it still feels a little bit like having a cookie for breakfast.  I hope you enjoy it as much as I do!

Vegan Gluten-Free Oatmeal Raisin Smoothie

This vegan, gluten-free smoothie tastes just like an oatmeal raisin cookie. You can omit the coconut if you prefer.
Servings 1
Author Turnip the Oven

Ingredients

  • 1 banana peeled and frozen
  • 1 cup unsweetened almond milk
  • 2 tablespoons gluten-free oats
  • 1 tablespoon shredded sweetened coconut
  • 1 tablespoon raisins
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon cinnamon
  • 4-5 large ice cubes

Instructions

  1. Combine all ingredients in a blender and blend until smooth.

    Hahaha, the bagged salad thing is real! I’ve been lucky recently though and I’ve been buying the actual greens instead of the bag 😉

    YES. I cannot stand that slimy spinach, or the really tough skinny leaves you find in those boxes too… oatmeal raisin smoothies sound like a good alternative though! we could enjoy this with my oatmeal cookie granola! 🙂

    This smoothie looks so good. Adding oatmeal to smoothies makes a huge difference.

      Thanks Colleen! I add oatmeal (or chia seeds) to all my smoothies. It really helps to thicken them up. Sometimes I do cooked quinoa too!
