Vegan Potato Leek Soup with Roasted Garlic. This rich, creamy (but creamless!) soup is so hearty and satisfying on a cold winter night.
Roasted Cauliflower with Romesco. This sauce! I could slather it on anything.
Artichoke and Olive-Stuffed Portobellos. Such a gorgeous, light, vegan entree. Canned artichokes make prep a breeze.
Roasted Asparagus with Grapefruit Vinaigrette. The tender, charred asparagus and bracing grapefruit are a perfect pairing. Grapefruit is in season now (even if asparagus isn’t) so I’m going to make this again soon.
Vegan Strawberries and Cream Bruschetta. This simple berry appetizer is a showstopper! I’m thinking about it for Valentine’s Day.
Limoncello Sangria. A cocktail recipe that is a total crowd pleaser. This recipe was also my best-performing pin on Pinterest this year, so I think people really love it!
Gluten-Free Banana Sprinkles Skillet Cookie. I got sick of always making banana bread with overripe bananas, so I made this instead. Much more fun 🙂
Honey Mustard Green Beans. One of my favorite weeknight sides! Once you start roasting your green beans you will never go back.
Spinach and Avocado Soup with Salsa Verde. Store-bought salsa verde is the secret ingredient in this easy soup. It would be perfect for the Super Bowl.
Fresh Tomato Bloody Mary. I drank the entire pitcher of these myself. (Don’t worry–they were virgin.)
Zucchini Noodles with Jalapeño Pesto. And then I bought a spiralizer and my life changed…
Indian Apple, Tomato and Radish Salad. This is the perfect side with just about anything. It’s completely fat-free and incredibly low in calories, yet it’s super flavorful. Try it stuffed in a pita.
Vegan Gluten-Free Oatmeal Raisin Smoothie. This healthy smoothie tastes like a giant oatmeal raisin cookie!
Feta and Kale Dip. This creamy dip is so much lighter and healthier than other options. It only has six ingredients and takes about 5 minutes to make. I’ll definitely be whipping this up for football playoff season.
Apple, Corn and Butternut Squash Soup with Curry. This vegan soup is scented with curry and garam masala, and enriched with coconut milk.
Extra Thick Sweet Potato Hot Chocolate. Vegan, paleo, gluten-free, and thick as soup. Need I say more?
Raw Pad Thai with Spicy Almond Sauce. I love pad thai, but I literally cannot stop eating it, and then I always feel a little sick after (all those noodles!). This super healthy version pairs a spicy almond butter and tamarind sauce with zucchini noodles and raw veggies.
Cornbread Coffee Cake. Are there two more beautiful words together than coffee and cake? I took this into my office and it was gone in seconds.

Easy Baked Chicken Meatballs with Quinoa. These gluten-free, protein-packed meatballs were a hit with my entire family. Love that they take less than 30 minutes to make from start to finish.
