I never knew I could fall in love so fast. ?
Since we moved two weeks ago, I’ve been spending a lot of time at Bed, Bath & Beyond. There are so many little things that we need that I didn’t think of before we got to our new house, like a welcome mat for the front door, toothbrush holders for the bathrooms, and a hamper for Owen’s bedroom. All very exciting purchases, let me tell you. I must have stood there for 10 minutes last weekend, weighing the pros and cons of all the different welcome mats, before realizing that I really didn’t care at all.
I was also completely starving. I mean, I know not to go to the supermarket hungry, but evidently you should never go to Bed, Bath & Beyond hungry either. You will emerge an hour later in a daze, having purchased a family-sized bag of pretzel thins, two different kinds of chocolate-covered graham crackers, Rao’s pasta sauce (the best, and on sale!), and a package of Sheila G’s Brownie Brittle.
I had never tried the stuff before, but it only took me the length of the drive home to demolish half the package and become totally, hopelessly addicted.
What’s not to love? It’s basically like an ultra-thin, shatteringly crisp, super chocolatey brownie wafer.
Of course, I could have done the smart and responsible thing, and limited my brownie brittle consumption to special occasions. But I didn’t. I learned how to make it myself, so I can eat it all. the. time.
This recipe is adapted from King Arthur Flour. The first time I made it I followed their cooking times exactly but my brittle was underdone in the middle. (Oh well, I *had* to make it again…) The second time, I increased the second baking time by five minutes and it was perfect. I flavored my brittle with a splash of peppermint extract, mini chocolate chips, and cacao nibs, but feel free to use whatever you like. Almond extract or espresso powder would be delicious. And if you don’t have cacao nibs, by all means just double up on the chocolate chips.
I was fueled purely by my own obsession and wasn’t even thinking about it, but this would make a lovely addition to any Easter basket!
Mint Chip Brownie Crisp

Spraying the parchment with nonstick spray may seem fussy, but don't skip this step! The crisp can be sticky. I used a pizza cutter to cut my crisp, but a sharp knife would work, too. If you don't have peppermint extract, you can substitute vanilla extract. If you don't have cacao nibs, use 1 cup of chocolate chips.
Ingredients
- 1/2 cup all-purpose flour
- 1/4 teaspoon kosher salt
- 1/4 teaspoon baking soda
- 2 large egg whites
- 1 cup granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 1/4 cup vegetable oil
- 1/2 teaspoon peppermint extract
- 1 tablespoon nonfat dry milk powder
- 1/2 cup mini chocolate chips
- 1/2 cup cacao nibs
Instructions
- Preheat the oven to 325°F. Line a baking sheet with foil and then with parchment paper. Spray the parchment paper with nonstick spray.
- In a small bowl, whisk the flour, salt, and baking soda.
- In a large bowl, whisk the egg whites until white and very frothy. Whisk in the sugar, cocoa powder, vegetable oil, and peppermint extract until smooth. Whisk in the nonfat milk powder and then the flour mixture. Stir in 1/4 cup of the chocolate chips and 1/4 cup of the cacao nibs.
- Pour the batter onto the prepared pan and use a spatula to spread it as thinly as possible (it should come almost to the edges, with maybe a 1- to 2-inch boarder around the sides). Sprinkle with the remaining chocolate chips and cacao nibs. Bake for 20 minutes. Remove the pan from the oven and use a pizza wheel or sharp knife to cut the crisp into squares. Do not try to separate the pieces. Return the crisp to the oven and bake for an additional 10 minutes.
- Allow the crisp to cool completely, then break into pieces. Store in an airtight container at room temperature.

Yes. . .there is something about Bed Bath & Beyond that leaves one ravenous, isn’t there.? I guess that is why they have all those snacks near the checkout counter.
But this divine brownie brittle. . .I can’t think of a more appropriate way to satisfy one’s impromptu hunger (or chocolate cravings). The thought of biting into the crispy delight is sending my taste buds into over drive (and I just had breakfast!!!)

Thanks Linda! It sounds really indulgent, but it’s actually not that bad for you. One piece has less than 150 calories. Of course, I can never stop at one, but that’s a different story.
