Light and Healthy Greek Yogurt Blue Cheese Dressing

We are moving on Sunday (eeek!) and a few weeks ago, while running house-related errands, we stopped for a quick bite at a family-friendly pub in our new neighborhood. Owen had chicken fingers and fries, and Alex and I shared two beers and a plate of wings.
 
By which I mean, Alex ate a whole bunch of wings, and I ate a whole bunch of celery sticks and an embarrassing amount of blue cheese dressing. Clearly, we are a match made in heaven. ?
 
Blue cheese is definitely polarizing, but I’m one of those people who absolutely loves it. When I was pregnant with Owen, I remember frantically Googling can I eat blue cheese? What kinds of blue cheese are pasteurized? Forget sushi or turkey sandwiches, what I really couldn’t fathom going nine months without was my beloved stilton or gorgonzola.

This light and healthy Greek yogurt blue cheese dressing is my new obsession. ↑↑↑ Yogurt and a tiny day of mayo are whisked with lemon juice for acid and a few tablespoons of milk to thin it out. Then I added Worcestershire and Tabasco for lots of savory flavor and spice. Last but certainly not least, I folded in ALL the blue cheese crumbles. Season to taste with salt and pepper and that’s it!
 
Seriously, just give me a head of lettuce and I’m good.
 
I realize now that I probably should have posted this last week, in time for the Super Bowl, but… I’m not a sports person and I wasn’t really thinking about it. Oops. Besides, I have bigger, better plans for this dressing (in the form of a wedge salad with herb-roasted grapes) lined up for Friday’s post. But you don’t have to wait until then! This dressing will take any salad to a whole new blue cheesy level. 
Greek Yogurt Blue Cheese Dressing

You can make this dressing up to three days in advance.

Ingredients
  1. 2/3 cup plain Greek yogurt (regular or low fat)
  2. 1/4 cup milk
  3. 2 tablespoons mayonnaise
  4. 2 tablespoons freshly squeezed lemon juice
  5. 1/4 teaspoon Tabasco sauce
  6. 1/4 teaspoon Worcestershire sauce
  7. 3/4 cup crumbled blue cheese
  8. Kosher salt and freshly ground black pepper
Instructions
  1. Combine the yogurt, milk, mayonnaise, lemon juice, Tabasco, and Worcestershire sauce in a bowl and whisk until smooth. Stir in the blue cheese and season to taste with salt and pepper.

    Good luck with the move! Love this – we are blue cheese lovers in this house and I adore using yogurt instead of sour cream. We do love our wedge salads and I’m a huge fan of roasted grapes. See you on Friday!

    I have always hated store-bought blue cheese dressings, but I LOVE LOVE blue cheese! (Blue cheese mac is everything.) This recipe actually looks great! I super love yogurt in all forms, and I’m definitely giving this a try.
