Grapefruit Ginger Green Juice

It’s the first week of January, which means I’ll actually be motivated to use my juicer for the next five minutes!

Seriously though, this grapefruit ginger green juice is about to become a big part of my life, because I’m giving up coffee temporarily. I’m not one of those people who drinks coffee all day long, but I am pretty reliant on one giant mug in the morning, so I’m nervous about going without. I’m hoping this energizing juice will help pick me up at the crack of dawn when my toddler appears at my bedside demanding waffles in the morning. 
 
Why am I giving up coffee? I haven’t shared a lot of personal stuff here on my blog. It’s hard to decide how much to reveal about my family and my real life. On the one hand, I want to be authentic and relatable. But on the other, I don’t want my private life floating out there on the Internet, you know? But, well, here goes…I’d like to have another baby soon. And efforts haven’t been going great (I wrote about my experience for A Cup of Jo, if you’d like to read it). Now that it’s the new year, I’m hoping for a fresh start.

Of course, it’s totally fine to drink a moderate amount of coffee when you are pregnant or trying to get pregnant, but caffeine has been shown to affect fertility. I’m trying to do whatever I can right now to give myself a boost. (I’m also drinking a lot of this healing lemon ginger bone broth.)
 
So welcome to my new morning routine of herbal tea and this invigorating green juice, made with grapefruit, cucumber, ginger, spinach, and mint. It provides a mega dose of both calcium and vitamin C, and even a bit of fiber and iron to boot. But really, it’s just plain delicious. I love the unexpected flavor combination of citrusy grapefruit and spicy ginger, and the mint is super refreshing.
 
It’s a terrific way to start your day, no matter what your health goals are this year.

I mean, I’m not saying I won’t miss coffee, but maybe I won’t miss it quite so hard 🙂

Grapefruit Ginger Green Juice

Ingredients
  1. 1 cup loosely packed baby spinach
  2. 1 cup loosely packed fresh mint
  3. 1 (1 1/2-inch) knob fresh ginger, peeled
  4. 2 large grapefruit, peeled
  5. 1 large cucumber, peeled
Instructions
  1. Working in order, feed all the ingredients through a juicer. Skim any foam from the surface of the juice. Divide between 2 large glasses and serve.

    Grapefruit & ginger are a terrific combo. My sister in law turned me on to a winter nightcap of warm water with lemon and ginger a year ago. Since I’ve got lots of grapefruit from the band fruit fundraiser case of citrus, I swapped the lemon wedge for a grapefruit one. It works great–and helps me with my evening sweet cravings.

    There’s nothing like a green juice to start the day. I thought giving up coffee would leave me feeling tired and moody, but drinking a green juice in it’s place has actually given me more energy than I ever thought possible. Great recipe here too. If you’re looking for something a little sweeter try melon instead of grapefruit.
